Your first steps with a steel pan

Steel pans are naturally non-stick and will truly last you a lifetime. However, they do need initial care to really serve you well.

Firing a brand new pan
The new steel pan must be baked, i.e. a polymer surface must be created on it, which is non-stick on one side and protects against corrosion on the other. So, how to do it:

  1. New pan wash with hot water and with the help of a soft sponge and a drop of detergent remove from both sides of the pan a layer of beeswax to protect the pan from rusting during storage.
  2. Pan dry thoroughly. Choose a cooking plate of the size corresponding to the bottom of the pan.
  3. Switch on the cooker for medium power and place the pan on it. Pour about 1 mm of oil into the pan and let it heat until the oil starts to smoke (rotate the pan as it burns to get the oil on the inside of the pan).
  4. After about three minutes the surface of the pan will start to darken, after about 10 minutes it will start to smoke and the inside will turn brown (see video). Brown is the right colour for your pan. No, she'll never be silver again.
  5. Let the pan cool and wipe off the excess oil with a paper napkin.
  6. Burning can be done repeatedly. If we feel that there was insufficient burning at the beginning, we can repeat the process.
  7. The pan darkens with each use. Simply put, the more used and darker, the better properties your steel pan will have.
The only truly healthy non-stick surface is the one created by natural browning on a steel pan. We will advise you how to create it and also how not to lose it.

What never to do with a steel pan
  1. Do not wash in the dishwasher. Do not soak.
  2. Ideally, do not wash the pan at all. Just wipe the pan with a napkin that may have a drop of oil on it.
  3. If you have to wash the pan, wipe it dry immediately, don't let it dry freely. Then ideally coat it with a thin layer of oil to protect the surface.
  4. Do not use a very fast heating ramp - booster on induction or highest level on other hobs! Always use only medium temperatures.
  5. Do not overheat the pan if it is empty.

How to cook in a steel pan


Remember that steel pans are best suited to high smoke point vegetable oils. That is, oils that can withstand the highest temperatures, such as rapeseed or sunflower oil.

Warm the pan sufficiently before cooking. This is the only way to prevent food from sticking. Make sure that the size of the hob matches the size of the bottom of the pan.

Prepare food at medium temperatures. High heat causes food to stick and, more importantly, burn.

Don't turn the ingredients too soon, but allow enough time for the crust to form on them so that they stick to the surface of the pan.
