Firing a brand new pan
The new steel pan must be baked, i.e. a polymer surface must be created on it, which is non-stick on one side and protects against corrosion on the other. So, how to do it:
- New pan wash with hot water and with the help of a soft sponge and a drop of detergent remove from both sides of the pan a layer of beeswax to protect the pan from rusting during storage.
- Pan dry thoroughly. Choose a cooking plate of the size corresponding to the bottom of the pan.
- Switch on the cooker for medium power and place the pan on it. Pour about 1 mm of oil into the pan and let it heat until the oil starts to smoke (rotate the pan as it burns to get the oil on the inside of the pan).
- After about three minutes the surface of the pan will start to darken, after about 10 minutes it will start to smoke and the inside will turn brown (see video). Brown is the right colour for your pan. No, she'll never be silver again.
- Let the pan cool and wipe off the excess oil with a paper napkin.
- Burning can be done repeatedly. If we feel that there was insufficient burning at the beginning, we can repeat the process.
- The pan darkens with each use. Simply put, the more used and darker, the better properties your steel pan will have.
