DESCRIPTION

Crepe pan from the French manufacturer De Buyer has a diameter of 24 cm and an ergonomically shaped handle with a so-called "French curve" for safe and comfortable handling. The crepe pan is perfect for preparing traditional crispy yet fluffy crepes. The low rim of the pan makes it easy to flip the pancakes and serve them conveniently. You can use the pan on all types of hobs, including popular induction, but only at moderate temperatures.

This crepe pan is made of high-quality iron, which conducts heat excellently, making the preparation of crepes fast, easy, and efficient. The pan has a blue-black hue, which is caused by a surface treatment called iron oxidation, protecting the pan against corrosion. The De Buyer crepe pan has excellent thermal conductivity, is robust, and has a very long service life. The pan cannot be washed in a dishwasher and requires special care to preserve its unique properties. Use the pan only on a burner/hob corresponding to the diameter of the pan bottom. And before first use, please read the instructions and practical tips in this description, where you will learn how to properly care for the pan.

For electrically powered cookers, we recommend setting the temperature dial to a higher setting and then lowering it to a level that will just maintain the selected temperature when the desired type of heating (temperature) is reached. The diameter of the bottom of the pan should be equal to the diameter of the hob.

For gas stoves, it is a good idea to use a matching burner diameter that can be slightly smaller than the diameter of the bottom of the pan by about 2 cm or use a flame diffuser.

The appropriate choice of pan diameter and hob diameter is also advantageous for energy reasons (energy saving). Due to the large number of stove types, this is only advice and not an exact guide.

How to care for BLUE CARBON pans:

  1. de Buyer steel pans are pans for life and also have a lifetime warranty. However, this does not apply to claims caused by misuse. Please read the instructions carefully before using it for the first time.
  2. Steel is a natural material and the pans are handmade. They may therefore have minor natural aesthetic imperfections.
  3. Before first use, remove the pan from its original packaging and wash it with a sponge under hot running water. Thoroughly wash the wax from the entire surface of the pan.
  4. The pan should be so-called "seasoned"; you can see the process in the video on the right. Turn the hob to medium power to prevent the bottom from warping (especially on induction) and place the pan on it. Pour approx. 1-2 mm of oil into the pan and heat until the oil starts to smoke = seasoning is complete (rotate the pan during seasoning so the oil reaches the inner sides; the pan will start to darken in places at the bottom).
  5. Allow the pan to cool and wipe away the remaining oil with a paper towel or cloth; do not wash it, so that the protective film remains and rust is prevented; the pan is now ready for use.
  6. After use, simply wipe the pan with a Tea towel; the oiled surface protects the pan. Store in a dry place.
  7. Use detergents only exceptionally and NEVER put the pan in the dishwasher or leave it to soak!!!
    The gradual darkening of the pan is natural, ensuring a better non-stick surface. Any rust that may have formed can be removed with the rough side of a sponge and then oiled, it is not a reason to complain about the pan.

CLEANING AND STORAGE

Wash the pan in warm water with a sponge. Do not leave the pan soaked. If your food sticks to the pan, use a sponge. Do not use detergents. Do not put in the dishwasher. To prevent oxidation, always rub it with a little cooking oil and dry it with an absorbent cloth.

STORAGE

Store in a dry place. Do not use detergents and do not put in the dishwasher. Suitable for all heat sources, including induction (induction with attachment only)

USE

Preheating using a small amount of fat.

CARE

Pour water into the pan and cook until any baked-on dirt is released, rinse with hot water and wipe dry, brushing with a small amount of oil.

Steel pan and induction:

Steel (iron) is a highly reactive heat conductor, and its induction heating performance is therefore exceptional. Please therefore observe the following instructions on the induction cooker:

  • do not use maximum power. Even the lower power on induction is enough for a great sear.
  • do not use the booster function (fast start-up of heating)
  • do not overheat the pan if it is empty
