Sharpening stone KAI DM-0708 is one of those products that look inconspicuous, but very quickly reveal who at home really takes knives seriously. An average person sees a flat sharpening tool. An enthusiast sees another opportunity to spend half an hour in complete concentration and then force paper on everyone in the household for a demonstration cut.

Main advantages:

  • The KAI SHUN DM-0708 is a combination Japanese water sharpening stone with two grit sizes, which combines coarse sharpening and subsequent honing of the edge in a single compact tool.
  • The #300 grit side serves as a coarse sharpening stage for the first phase of work, when it is necessary to significantly restore the geometry of the cutting edge or remove major signs of wear.
  • The second side with #1000 grit follows with finer sharpening and allows you to create a more even and usable cutting edge after the coarse treatment.
  • The combination of #300 and #1000 is mainly suitable for knives that can no longer be just lightly touched up and need more significant edge restoration before subsequent finer sharpening.
  • The DM-0708 belongs to the accessories of the SHUN series and is designed as a classic water stone, giving you full control over the angle, pressure and number of strokes during use.
  • Before sharpening, the stone is submerged in water and allowed to soak until air bubbles stop rising from it; during work, its surface should remain constantly wet.
  • During sharpening, water helps to wash away released particles and creates a working slurry on the surface of the stone, which participates in the actual sharpening process.
  • During sharpening, the blade is guided back and forth along the entire length of the stone to ensure the sharpening surface is used evenly and the edge is worked along its entire length.
  • For double-bevelled knives, the blade is held at an angle of approximately 15° to the sharpening stone, and this angle needs to be maintained as consistently as possible during individual strokes.
  • When guiding the blade along the stone, the cutting edge is oriented at an angle of approximately 45 to 60° relative to its longitudinal axis, which allows a sufficiently large part of the sharpening surface to be used.
  • There is no need to press hard on the knife during sharpening - KAI recommends smooth guidance with light pressure, which allows the abrasive to work without unnecessarily overloading the edge.
  • The stone can also be used for single-bevelled Japanese knives, although the method of placing the blade differs from standard symmetrically ground knives.
  • Included is a black base made of polypropylene and elastomer, which supports the stone during sharpening and helps reduce its movement on the work surface.
  • The DM-0708 is made in Japan and the grits are clearly marked on each side, so you can easily distinguish the coarse #300 from the finer #1000 when working.
  • This model is mainly suitable for more basic edge restoration: the coarse #300 side can handle more significant wear, and the #1000 side immediately follows by preparing the cutting edge for regular use or further finer sharpening.
