Product detailed description

The Sharpening stone KAI AP-0334 is one of those products that look unassuming, but very quickly reveal who at home actually takes knives seriously. An average person sees a flat sharpening tool. An enthusiast sees another opportunity to spend half an hour in complete concentration and then force paper on everyone in the household for a demonstration cut.

Main advantages:

  • The KAI SEKIMAGOROKU AP-0334 is a combination water sharpening stone with two grit sizes, which allows you to perform basic sharpening as well as a finer finish of the edge on a single stone.
  • The #1000 grit side is used for the actual sharpening and restoration of the cutting edge, making it suitable as the 1st step in maintaining a knife whose edge already needs more significant attention.
  • The finer #4000 grit side follows the basic sharpening and is used for more precise smoothing and finishing of the edge.
  • The combination of #1000 and #4000 covers two consecutive sharpening steps without the need to purchase and alternate between two separate Stones during work.
  • The AP-0334 belongs to the SEKIMAGOROKU series and uses a ceramic-bonded abrasive, which KAI recommends for the traditional Japanese method of manual sharpening of kitchen knives.
  • The Stone is suitable for both double-bevel and single-bevel blades, so it can be used not only for common European and Japanese knives, but also for traditional single-bevel shapes.
  • Before sharpening, the stone is soaked in water until air bubbles stop rising from it, and during the work itself, its surface should remain constantly wet.
  • When sharpening a double-bevel knife, KAI recommends maintaining an angle of approximately 15° between the blade and the surface of the Stone, so that a uniform cutting edge is created along the entire length.
  • The rectangular shape provides a long and flat sharpening surface suitable for smooth guiding of kitchen knives as well as other wide flat edges, such as scissors.
  • The dimensions of the set are approximately 23.8 × 9.3 × 5 cm, so it offers plenty of working surface even for longer kitchen blades while remaining easy to store.
  • A protective case is included, which is not only for storage - during sharpening, it also functions as a practical base under the sharpening stone.
  • The base is designed to be non-slip on the worktop, which helps keep the stone stable during repeated blade strokes.
  • The positioning of the Stone in the base is slightly tilted so that water can drain more easily during sharpening and does not accumulate directly under the sharpening surface.
  • After finishing work, the stone can be left in the base, the design of which allows air access from all sides and facilitates even drying before storage.
  • The same case subsequently protects the stone during storage and transport, so there is no need to purchase a separate holder or additional storage packaging.
  • The AP-0334 is made in Japan, and directly on the Stone, the individual working sides are marked as Yellow #1000 and Brown #4000, so you can easily tell them apart when sharpening.
  • The AP-0334 represents a practical two-stage system for the manual maintenance of high-quality kitchen knives - the coarser side restores the edge and the finer side follows up with its more precise finishing.
  • KAI does not just treat blades as a single item in a catalogue - for more than a century, it has been developing know-how around cutting edges and, alongside the knives themselves, also offers specialised equipment for their sharpening and long-term maintenance.

Additional information:

  • dimensions: 23.8 x 9.3 x 5 cm
  • material: ceramic-bonded abrasive
  • with long-term use, the sharpening surface gradually wears down and may lose its flatness; a flattening stone is designed to level it, restoring the flat working surface needed for precise sharpening
